Description

Baingan Bharta is a smoky, flavorful Indian dish made from roasted eggplant, mashed and cooked with onions, tomatoes, garlic, and aromatic spices. It’s a healthy, vegan, and gluten-free recipe that pairs well with roti, naan, or rice.


Ingredients

  1 large eggplant (baingan)

  2 medium onions (finely chopped)

  2 large tomatoes (finely chopped)

  4 cloves garlic (minced)

  1-inch piece ginger (grated)

  2 green chilies (chopped)

  1 tsp cumin seeds

  ½ tsp turmeric powder

  1 tsp red chili powder (adjust to taste)

  1 tsp garam masala

  1 tbsp mustard oil or olive oil

  ¼ cup fresh coriander leaves (chopped)

  1 tbsp lemon juice

 Salt to taste


Instructions

Roast the Eggplant:

Wash and pat dry the eggplant.

Prick it with a fork in a few places and roast it over an open flame until the skin is charred and the flesh becomes soft. Alternatively, you can roast it in an oven at 400°F (200°C) for 30-40 minutes.

Once done, let it cool, then peel off the charred skin and mash the flesh with a fork.

  Prepare the Masala:

Heat oil in a pan and add cumin seeds. Let them splutter.

Add chopped onions and sauté until golden brown.

Stir in garlic, ginger, and green chilies, and cook for another minute.

Add chopped tomatoes, turmeric, red chili powder, and salt. Cook until the tomatoes turn mushy.

  Mix the Mashed Eggplant:

Add the mashed eggplant to the pan and mix well.

Cook on low heat for 5-7 minutes, stirring occasionally.

  Final Touch:

Sprinkle garam masala and fresh coriander leaves. Mix well.

Drizzle lemon juice before serving.

  Serve Hot:

Enjoy Baingan Bharta with roti, naan, or steamed rice.

Notes

To enhance the smoky flavor, cover the cooked Bharta with a lid and place a small bowl with burning charcoal in the center. Drizzle a drop of oil over the charcoal and quickly cover the lid to infuse the smoke for a minute.

You can add green peas for extra texture and nutrition.

Mustard oil gives it an authentic flavor, but you can substitute it with olive oil.
