Ingredients
Dry Ingredients:
2 cups (250g) all-purpose flour
1 cup (200g) granulated sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 tablespoon orange zest
Wet Ingredients:
¾ cup (180ml) fresh orange juice
½ cup (113g) unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
Add-Ins:
1 ½ cups (150g) fresh cranberries (halved if large)
Optional: ½ cup chopped walnuts or pecans
Instructions
Step 1: Preheat & Prepare
Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan or line it with parchment paper.
Step 2: Mix Dry Ingredients
In a large mixing bowl, whisk together flour, sugar, baking powder, baking soda, salt, and orange zest.
Toss cranberries into the dry mixture to prevent them from sinking while baking.
Step 3: Mix Wet Ingredients
In another bowl, whisk eggs, orange juice, melted butter, and vanilla extract until well combined.
Step 4: Combine & Mix
Gradually add the wet ingredients into the dry mixture, folding gently. Do not overmix—a few lumps are okay!
Step 5: Bake
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Cool & Serve
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
