Ingredients
1 ripe avocado
2 slices of sourdough or whole-grain bread
2 eggs
Salt, to taste
Pepper, to taste
Optional toppings: Chili flakes, lemon juice, microgreens, smoked paprika, or everything bagel seasoning
Instructions
Toast the bread: Place your bread slices in the toaster and toast until golden brown and crispy.
Prepare the avocado: Cut the avocado in half, remove the pit, and scoop out the flesh into a bowl. Mash it with a fork until creamy, adding a pinch of salt and a squeeze of lemon juice if desired.
Cook the eggs:
Sunny-Side Up: Heat a non-stick pan over medium heat. Crack the eggs into the pan and cook until the whites are set but the yolk remains runny.
Poached: Bring water to a gentle simmer, add a splash of vinegar, swirl the water, and carefully drop the egg in. Cook for about 3-4 minutes.
Scrambled: Beat the eggs in a bowl. Pour into a non-stick pan over low heat, stirring constantly until fluffy.
Assemble the toast: Spread the mashed avocado evenly over the toasted bread. Top each slice with a cooked egg.
Add finishing touches: Sprinkle with salt, pepper, and optional toppings like chili flakes or microgreens for added flavor and texture.
Notes
If your avocado isn’t ripe, place it in a paper bag with a banana to speed up ripening.
For extra crispiness, toast the bread a little longer before adding toppings.
To store leftover mashed avocado, add a squeeze of lemon juice to prevent browning and seal in an airtight container.
