4 pieces chicken breasts or thighs
2 medium apples, sliced
1 cup cranberries (fresh or frozen)
1 cup raspberries
2 tablespoons honey (or maple syrup for a vegan option)
2 tablespoons balsamic vinegar
1 cup chicken broth
2 tablespoons olive oil
Salt and pepper to taste
12 sprigs fresh rosemary or thyme (optional)


Instructions

Start by mixing olive oil, honey, balsamic vinegar, salt, and pepper in a bowl. Coat the chicken in this mixture and let it marinate for at least 30 minutes, or longer for deeper flavor.

Preheat the oven to 375°F (190°C). Sear the chicken in a hot skillet for a few minutes on each side until golden brown.

Place the chicken in a baking dish and arrange the apple slices, cranberries, and raspberries around it. Pour the remaining marinade and chicken broth over the top to ensure the fruits are well coated.

Cover the dish with foil and bake for 25-30 minutes. Remove the foil for the last 10 minutes of baking to let the fruits caramelize and enhance their sweetness.
